Lower in Fat and sugar than most zucchini carrot breads, this fabulous recipe is one to be sure and save!

Healthiest Zucchini Carrot Bread

Makes 1 loaf – 10 Servings

Prep Time: 10 minutes

Cook Time : 50-60 minutes

Ingredients

Dry Ingredients

1 cup : whole wheat flour

½ cup : quinoa flour

1 scoop : protein powder

2 tbsp : ground flaxseed (optional)

1 ½ tsp : cinnamon

½ tsp : nutmeg

1 tsp : baking soda

½ tsp : salt

1/8 tsp : baking powder

 

Wet Ingredients

1 : egg

½ cup : sugar

2 tbsp. : brown sugar, packed

3 packets : stevia (optional…I did not add this time but have before)

1 tbsp : coconut oil

¼ cup : greek yogurt

1/2 cup : unsweetened applesauce

1 tsp : vanilla

¼ cup : almond milk (optional – use if mixture is dry)

1 1/2 cups : grated zucchini*

1/2 cup : grated carrots

*Use your Vitamix to chop veggies in 10 seconds.

Directions

In one bowl mix together the dry ingredients. In a separate bowl mix the wet items listed above.

Slowly stir vegetables into the wet mixture followed by the dry ingredients.

Pour into greased bread pan and bake at 350 degrees F for 50-60 minutes or until toothpick comes out clean.
