Since I talk about how great Almond milk is…I am going to show you how to make your own. You can buy it at the store, but it is extremely easy to make at home.

Regular Almond Milk
1 Cup sprouted almonds
3.5 – 4 Cups water
2 Stevia Packets (or 1.5 tbsp honey or 2 large dates)
Pinch of sea salt to bring out flavor
¼ – ½ tsp of Cinnamon
Vanilla Almond Milk
Add 1tsp vanilla prior to blending
Chocolate Almond Milk
Add the following prior ti blending
2 Tablespoons of raw cocoa or carob powder
¼ tsp Xanthium gum if you want your chocolate milk thickened (optional)
Step 1: Sprout Almonds by soak them overnight or at least 8-12 hours.
* Sprouting almonds is a key and important step in this process. It makes the almonds easier to digest, softer, moister, and sweeter. This helps your body to be able to benefit from the nutrients and monounsaturated fatty acids that are in almonds. *
Soak in water overnight at room temperature or in the fridge. Soak 1 cup of almonds in about 4 cups of water. Drain and rinse before use.
Step 2: Rinse the almonds before use. Put in your Vitamix (or high-speed blender along with 3.5 cups of water. (Use ½ cup more water if you like you milk a little thinner.)
Step 3: Blend on high for 1-2 minutes in Vitamix (or 3-5 minutes in blender).
Step 4: Pour over cheesecloth of nut bag and squeeze until all liquid is drained.
(You can keep extra almond milk leftovers to add to oatmeal or hummus….or even dehydrate it to make almond meal)
Step 5: Poor almond milk back into your blender and add in optional ingredients. (Stevia, cinnamon, cacao/vanilla, and pinch of salt)
Step 6: Poor in glass jar and refrigerate. Enjoy within 3 days.
