Berry Baked Oatmeal :: Superfood Inspired
This recipe is a healthy, filling and perfect for a Saturday or Sunday morning. I like oatmeal, but don’t prefer it too runny. This recipe to me is more like a healthy breakfast cake, but for only 184 calories. It’s fun to explore, so make this recipe your own by adding in different items you like or have on hard around your kitchen.

Cook Time: 20-25 Minutes
Total Time: 35 Minutes
Servings : 8 (You can refrigerate for 2 days)
2 cups :: Rolled Oats (not instant)
1/3 cup :: Coconut Palm Sugar (or brown sugar)
1-2 packets :: Stevia
1 tsp. :: Baking Powder
2 tbsp. :: Chia Seeds
2 tbsp. :: Sliced Almonds
1 tbsp. :: Cinnamon
1 tbsp. ::Lemon or Orange Zest (optional)
1/3 cup :: Carob Chips (or dark chocolate chips)
½ :: Banana
½ Cup :: Chopped Strawberries
½ Cup :: Blueberries
2 cups :: Unsweetened Almond Milk (I use the vanilla flavored)
1 :: Egg
¼ cup :: Greek Yogurt
2 tsp. :: Vanilla Extract
Pre-heat oven to 375 degrees and coat an a 7×11 or 9×13 pan
Get a large bowl and add in the oats, coconut palm sugar, stevia (optional), baking powder, chia seeds, sliced almonds, cinnamon, and lemon zest. Also add in half the carb chips, strawberries and blueberries.
Mix all those items together and pour into the baking pan.
In the same bowl (that is now empty) crack and egg and whisk together. Next add the almond milk, vanilla, and Greek yogurt and mix together. (For more oatmeal like consistency you will want to add an extra 1/2 cup or almond milk)
Pour liquid mixtures evenly on top of the dry oatmeal mix in the bowl. You might have to shake the pan a little bit.
Next, Arrange the banana, and 2nd half of the strawberries and blueberries on top.
Bake at 375˚ F for 30-35 minutes. The 7×10 baking dish might take a few more minutes to cook than the 9×13 baking dish.
Let cool for 5 minutes and enjoy while it is hot.

To bring the fat down a little you could cut out the chia seeds…but I always leave them in because chia seeds contain the healthy fats that our bodies do need.
